U2M - Raspberry

This raspberry melomel has Talisman Farm raspberries and an ale yeast. Slightly sweeter than many of our meads, this one was also ready to drink earlier than most.

Ingredients:

Yeast was rehydrated at brew time.

November 9, 2000 - Heated honey with water and skimed some scum. Added raspberries and heated to 160 F. Added the chiller and heated back to 160 F. Kept hot for 10 minutes. Cooled to 100 F and poured into bucket. Water added to make just over 5 gallons. Pitched yeast. Stired and stored with a bubble lock.

December 21, 2000 - Racked. This did not go well. The racking cane seemed unable to siphon properly. Eventually we used the hose without the cane. When that clogged we gave up, losing a gallon or so of the must.

February 1, 2001 - Racked again. It really needed it.

August 30, 2001 - Racked and once again had problems with the siphon. This will be a very small batch.

September 13, 2001 - Bottled. It is a small batch, and it's already delicious.
